French barrel fermentation and barrel aging (aged for 10 months in 500L & 600L puncheons / 44% new barrels) Salus Chardonnay is made from American clones in our own vineyards and has a gorgeous aroma of tropical fruits and peaches, but also has a pleasant acidity and a well-balanced finish. It was served at the candlelight reception on the eve of President Obama's second inauguration (10VTG).
Vintage Information
2022 was a more balanced and milder vintage than recent years. A welcome rainfall at the start of the winter gave way to a short, dry winter, but well-timed rains in April allowed the vines to grow well and enjoyed stable temperatures through the summer. These favourable conditions continued throughout most of the Chardonnay harvest, allowing for a long growing season before harvest.
Technical information
Fermentation took place in large barrels of 500 and 600 liters. The rate of exposure to air is reduced compared to normal 225cc barrels, which slows down the aging process. Stirring of the wine during aging was kept to a minimum to maintain its aroma and freshness. The wine was aged on the lees for 10 months.
Tasting Comments
The 2022 Salus Chardonnay is a perfect blend of complexity, refinement and richness. It opens with energetic aromas of honeysuckle and lemon peel, followed by bursts of quince, ripe peach, lemon barbera and hints of brioche on the palate, leading to a long finish with firm texture and acidity. This wine combines the richness of fruit shining in the California sun with the poise and elegance of firm acidity.
