Vinification: 100% lees removed, fermented with natural yeasts in 50hl upright wooden barrels. Malolactic fermentation in 500L French oak barrels (50% new or more), aged for 2 years. Racked, aged for 1 year in large barrels, bottled and aged for another 3 years.
