2019 was a year of challenges during the growing season. Harvesting was delayed due to unusually cool weather and rain during the spring. Harvested grapes are divided by field and fermented, then barreled in French and American oak barrels (10% new barrels). It is sludged twice during barrel aging and then bottled after careful filtration. In 2019, Cabernet Sauvignon was aged in barrels for 15 months, blended in the winter of 2021, and bottled in the spring of 2021. Liberty School has been a dinner staple for over 40 years. A beautiful deep ruby ​​color with a dark rim, the glass fills with aromas of fresh vanilla, cedar and blackcurrant. Subtle hints of leather, black pepper, savory, black cherry and sweet oak are wrapped in approachable, smooth tannins, making this a great food wine.
