The nose offers wild red berries, violets, balsam flowers, and undergrowth. The palate is harmonious yet sharp, more dynamic than powerful, more mineral than acidic, with fine tannins and lively freshness supporting the firm, elegant fruitiness. The aftertaste is full of flavor. It goes wonderfully with Florentine bistecca, pork rostinciane, baked vegetables, game, offal, and stewed meat dishes. The grapes are mainly harvested from the vineyards of Il Prato and Le Masse, at an altitude of 470 to 655 meters. An optical sorting machine is used for sorting. After gentle pressing, the must begins to ferment, and is left on the skins for about 12 days at a temperature of 24-26°C, with regular pumping over and delestage to extract the ideal anthocyanins and tannins. The following spring, the wine is placed in 30-50hl wooden barrels and aged for more than two years before being finally blended and bottled. Cantina on the hill of Ramole in the Greve in Chianti region. Ramole is the name of this land as well as the name of the Sangiovese genes discovered here. Ramole di Ramole is a name given to the original Sangiovese. It is said that the Sangiovese of Brunello di Montalcino originated from trees transplanted from Ramole. This land is well ventilated and dry, making it an ideal location. In addition, because it is on a slope, the water drains well, and the refreshing, pleasant acidity is born from this environment. The estate owns 47 hectares at an altitude of 350-600m. This is the highest area of Chianti Classico. Currently, it is said that the area of Lamore is moving to become a subzone of Chianti Classico, separated from Greve in Chianti, and become "Lamore in Chianti". This shows that the unique terroir of Lamore gives Chianti Classico more individuality and diversity, and that it contains the qualities to produce great wine. The soil consists of three parcels, one Galestro soil and two soils composed of clay, sand and stone. The average age of the vines is about 20 years. However, some of the vines are over 70 years old. The region is characterized by moderate precipitation in spring and autumn, cold winters and warm summers. This area experiences extreme temperature differences due to the winds blowing in from the northern Apennines, which results in grapes that are rich in both sugar and polyphenols, and have a beautiful acidity and elegance. Enologo Andrea Daldin is a specialist who worked with his predecessor, H. Pariani, who has since retired, for about 20 years. He is from San Gimignano, and his father is a grape grower who makes Vernaccia. His five brothers are all still in the wine business, making this a true wine family. Having helped his father with his work since he was a child, wine work has become ingrained in him, and for him, this job is truly his calling.
