In California, producing reasonably priced sparkling wine that can be enjoyed as a meal starter requires sourcing high-quality grapes.
It is extremely difficult to secure grapes that have a sharp acidity and the potential to not become bitter due to being too squeezed during pressing, but thanks to our many years of experience and connections, we are able to procure grapes with the optimal taste and appropriate price.
Creating sparkling wine that can be enjoyed with food is rooted in my Italian roots and food culture.
Technical information
Winemaking: The Pinot Noir juice was fermented and aged in stainless steel tanks, then blended with Chardonnay and fermented a second time in the tank using the Charmat method, retaining the natural effervescence in the bottle.
*What is the Charmat method? Instead of the in-bottle secondary fermentation that is popular in Champagne, still wine is packed into large tanks, sealed, and allowed to undergo secondary fermentation there, preserving the natural bubbles.
Because the wine does not come into contact with air, the grape aromas remain and a fresh sparkling wine is produced (no artificial carbonation is added).
