The vines are 10 to 60 years old. The oldest vines were planted in 1925. The village of Saint-Andran. The soil is a mixture of clay, silex, and Kimmeridgian. Fermented and aged in stainless steel tanks. The current owner is Alexis Jannot. The 14.2 hectares of vineyards owned by the winery are composed of 70% silex-covered soil, 25% Kimmeridgian soil, and 5% limestone, and he says, "Compared to other producers in Pouilly-Fumé, the proportion of silex is higher." In terms of soil composition, the silex is newer, and since the silex is deposited on top of the Kimmeridgian soil, the Kimmeridgian is exposed, especially on slopes. Some of the vines are over 80 years old, which gives the wine an even deeper flavor. The harvested grapes are selected and then soft-pressed, and fermented and aged in stainless steel tanks. Each fermentation is done according to the characteristics of the vineyard, and then the flavor is adjusted by assemblage. Malolactic fermentation is not performed. The owner, Mr. Janot, says, "In winemaking, I believe in the 3Fs: Fresh, Fruity, and Faithful."
