Sisters Vineyards brings to the wines gorgeous, charming flavors of raspberry and other fruits, as well as suppleness, while Roland Green Vineyards brings to the wines wild strawberry and red meat aromas, as well as a robust, muscular quality.
The fruit is harvested at the optimal time, while checking the balance of flavor to ensure the sugar content does not become too high, and then gently crushed by foot.
The wine is mainly extracted using remontage and aged in three barrels: one-year barrels, three-year barrels, and old barrels.
Cool and delicate with complex flavours.

He has a particular knowledge of Pinot Noir and is one of his closest and most respected winemakers, Jason Lett, the second-generation owner of The Eyrie Vineyards, a legendary winery in Oregon's Willamette Valley. One day, when he asked to train at a winery, Jason replied, "Wine journalists only evaluate wines, but they don't understand the essence of winemaking.
Actually making wine broadens your perspective.
While you're here, why not try making your own cuvée?
That is a condition for accepting the training."
Those words resonated with him, so he took time off work to stay in the area for an extended period and brewed just three barrels of truly handmade Pinot Noir.
We were fortunate in 2021 to have ideal weather for growing Pinot Noir, allowing for a variety of options, but with Jason's consent, we made our own decisions regarding the harvest time and brewing method, resulting in a style different from The Eyrie.
The wine's name, which means "guardian," is modeled after a coyote, which protects the fields by preying on field mice that damage the vineyard roots. The label design was also designed by the winery himself.
