Fermented and aged in French barrels (10% new barrels) for 8 months. Frequent batonnage (mixing lees to add flavor) is performed to add flavor and a supple mouthfeel. Finished in the style of a white wine from Pessac-Léognan in Bordeaux. Pleasant herbal aromas with a light hint of vanilla. Juicy and firm, with a good balance of acidity. Can be expected to age in the bottle for 5-8 years.

Technical information

The wine is destemmed and gently pressed to prevent bitterness, then fermented in French barriques (225 liters) (10% new barrels) and aged on the lees for 7 months.

Frequent batonnage (mixing the sediment to add flavor) is done to add flavor and a supple mouthfeel. Blended and settled, the wine is lightly filtered and bottled about 10 months after harvest.

Vintage Information

The 2022 Walnut Wash Vineyard had another dry vintage. Overall, the weather was warm and mild through September. The Sauvignon Blanc harvest began the third week of August, and we were fortunate to avoid the very hot days in early September. The yield and quality were excellent, with grapes that were perfectly ripe and had plenty of acidity.

Tasting Comments

It is finished in the style of a white wine from Pessac-Léognan in Bordeaux.

It has a pleasant herbal aroma and orange marmalade-like flavor, with a light hint of vanilla from barrel fermentation and aging.

It has a well-balanced blend of clean grapefruit-like acidity and tropical fruit nuances like guava, and is very creamy on the palate.

This Sauvignon Blanc is rare in California, as it can be enjoyed now but can also be aged in the bottle for 5-8 years.

Field Information

Our own Walnut Wash Vineyard in Calistoga

A cold wind blows in from Sonoma, making it much cooler than you'd expect for Calistoga.

This preserves the acidity and gives the wine a fresh, lively flavor, and careful cultivation is carried out to protect the grapes from direct sunlight by providing shade with leaves, preventing them from burning.
