Nero d'Avola, a red wine variety representative of Sicily, is an indigenous variety of the island. It has a great structure, but is characterized by soft tannins and familiarity. This wine, full of red berry flavors, is perfect with red meat and pasta with tomato sauce. The grapes are destemmed and gently pressed. Fermentation is controlled at a temperature not higher than 28°C, and frequent pump-overs are performed in the early stages of fermentation to extract a firm color and soft tannins. After fermentation is complete, the wine is racked and subjected to malolactic fermentation. Colpasso is a winery in western Sicily with vineyards in Trapani province, where Marsala and Mazara are located. We are committed to Italian indigenous varieties that have been rooted in the land since ancient times, and we make wines that express "tradition" by combining the knowledge we have cultivated and the latest technology that we have explored. Colpasso means "a step up the hill." It is a combination of the abbreviation of Collina, "Col," meaning "hill," and "Passo," meaning "step," and has two meanings. The company believes that "the best wine comes from the best vineyards, not from cellars," and produces grapes that retain the characteristics of indigenous varieties. They are committed to cultivating wines that respect nature, using almost no pesticides and avoiding human intervention, and make healthy, natural wines. In addition, they do not use any animal-derived ingredients in the brewing process, and the wines are "vegan certified," taking time and effort. They innovate while protecting "tradition," and deliver wines to the people "on the hill" who enjoy high-quality wines on a daily basis, once again conveying the appeal of indigenous varieties.
