The vines are over 25 years old. Alzarri, a plot in the center of Castel Cellino that produces grapes that are more suitable for aging. Cofere started from a vineyard that has been in existence since the 19th century in Castel Cellino, in the center of Soave Classico. Azienda Agricola was founded in the 1960s when Giuseppe Cofere, a professor at an agricultural school, met Giovanna Visco, the daughter of a wine grower. Although Giuseppe was a professor at an agricultural school, he was very passionate about winemaking. With that passion, he learned a lot from famous agricultural consultants in Verona, such as Attilio Scienza, Mario Fregoni, Antonio Calò, and Giovanni Cargnello, and built the foundation of his own winemaking. In 1971, he took over the vineyards in Castel Cellino owned by the family of his wife, Giovanna, and started making wine here. In 1994, his son, Alberto Cofere, took over the cantina. While following the teachings of his father, Giuseppe, Alberto is also working on new innovations. In the 2003 vintage, he was awarded the Tre Viecchieri award, and has been highly acclaimed as a winemaker since early on. The vineyards are about 25 hectares, centered around Castel Cellino in the central north of Soave Classico. While Castel Cellino is the center of Soave Classico, it is also Cofere's pride and joy, as he has been working with the vineyards for many years and has been passionate about maximizing the potential of the grapes. When plowing the fields, they use horses and take great care not to over-compact the soil. They cultivate the vineyards carefully, and in 2014 they obtained organic certification. Natural = natural, that is the essence of Cofere's wine.
