A blend of Domaine Eden's cuvée and Mount Eden's cuvée, which has a fruity flavor and can be enjoyed when young. Fermented using natural yeast in French barrels and aged for 10 months. Enjoy the aromas and flavors of citrus, anise, dill, and leaf mold.
The grapes in their own vineyards at high altitudes are not irrigated or fertilized, which puts them under a lot of stress, resulting in low yields and grapes with a strong sense of concentration.
Domaine Eden's Chardonnay is a blend of Domaine Eden cuvées and Mount Eden cuvées, which have a fruity flavor and can be enjoyed at a young age.
In 2019, 76% of the grapes used were from Domaine Eden and 24% from Mount Eden.
When Domaine Eden was first established, the majority of the grapes were sourced from Mount Eden, and in the 2015 vintage, 2/3 of the grapes were from Mount Eden. However, from the 2017 vintage onwards, the ratio has been reversed as mentioned above, making the wines easy to drink from the moment they are released.
Technical information
Harvesting: Started on September 12th, nine days later than the previous year, and was completed in two days.
All of the vineyards are located at high altitudes and in dry farmland, so the grapes are picked early to preserve the natural acidity.
Brewing and ageing: Fermented in French barrels and aged on the lees for 10 months.
(Barrels from 2nd to 5th year) 100% malolactic fermentation.
Vintage Information
In 2019, rain fell during the flowering and fruiting periods, resulting in the smallest yield since 1998. However, the grapes, which have a powerful, concentrated flavor, were harvested at the best possible time in September.
Tasting Comments
Delicate aromas of hazelnut, anise and vanilla.
The palate is balanced with citrus flavors, cardamom, yeast, earth and brown spice notes, and has great acidity on the long finish.
It is delicious to drink now, but thanks to the Burgundy-style brewing method, which emphasizes the wine's aging potential, it can be enjoyed aged for more than 10 years.
It follows the style of Mount Eden, but gives the impression of being more open than Mount Eden.
However, after aging in the bottle, the length of the aftertaste is comparable to that of Mount Eden.
