The history of the Domaine began in 1936 when Camille Combier, grandfather of the current owner Laurent, purchased a 3ha vineyard in the village of La Roche du Grand, south of Tain-Hermitage. In the 1960s, Laurent's parents, Maurice and Paulette Combier, established a company in Pont-de-Lisère, near the vineyard, and began full-scale grape growing. In the early days, they sold grapes to traders, but after Laurent graduated from winemaking school, they started the Domaine in earnest. Domaine Combier is a "pioneer of organic farming" that has been cultivating organically since the 1970s. Maurice has been practicing organic farming since then, taking into consideration the environment around the vineyard and the orchards that surround it. Learning from many experiences and failures, he established his position as a pioneer of organic grape growing in Crozes-Hermitage. Laurent, the son who inherited his father's winemaking work and passion, inevitably went down the path of organic wine. Currently, organic wine is practiced in all 25 hectares of vineyards. Among them, Clos des Grieves, 9 hectares south of Crozes-Hermitage, is the best vineyard planted by his grandfather Camille in 1952, and is Combier's haute couture wine. Laurent is in charge of all winemaking. He has set up the brewing equipment and strives to turn healthy grapes into great wine. The stainless steel tanks with temperature control are designed to allow work to be done while using gravity in a brewery that uses the difference in height. From the time the harvested grapes arrive until they are moved to the stainless steel tanks, and even during the brewing period, work that goes against gravity is avoided, and natural winemaking is carried out. 100% of the red wine is destemmed, and the style of the wine made aims to be an elegant and lustrous wine like Burgundy's Pinot Noir. Laurent values balance and harmony and never over-extracts, and his goal is to make "cheerful and seductive wines." These wines are delicious in every way, from the attack to the aftertaste. He respects the terroir and sublimates that feeling into his wines, making him an important producer of Crozes-Hermitage.
