A shiny yellow gold appearance. Ripe citrus fruits, hazelnuts, pistachios, brioche, and tortoiseshell. The acidity is mellower than Cuvee 36, and the rich citrus fruit flavor and extract linger for a long time.

Located in Monticelli Brussati, on the east side of the Franciacorta area, this producer is run by brothers Emilio and Aurelio Del Buono. The Casa Caterina vineyards are scattered on hills and have mineral-rich soils that are a mixture of limestone, tuff and clay-limestone.

He started bottling in 1983, but left the Franciacorta Consortium in 2005 due to differences in direction. Since then, he has been making wine according to his own goals, without being bound by regulations.

He is a fan of the champagne made by Jacques Selosse and his beloved disciple Jerome Prevost, and like them, he bases his winemaking on organic cultivation, fermentation using only wild yeasts, and non-dosage.He also does not use any ingredients other than those derived from grapes, such as SO2 during brewing or sucrose during tirage.

Grape must is used during the tirage process, which coincidentally is a similar method to SENZA ZUCCHERI ESOGENI (no exogenous sugars used) advocated by Vezzoli, which we handle.
