For centuries, winemakers have enjoyed adding unique spices and flavors to their wines by charring the oak barrels in which they age.
After years of trial and error, oak has become the standard wood for wine aging. The grapes and the winemaker's decision on how much oak influence they want in their desired wine depend on the barrel choice and level of charring.
Coopers can control the level of "toast" in their barrels - light, medium or dark - and winemakers choose oak barrels with different levels of charring to achieve the flavors, textures and aromas they desire in the finished wine.

French Camp Vineyard
Barrel Burner wines are primarily made from grapes from French Camp Vineyard in Paso Robles. French Camp is a 1500-acre vineyard located in Paso Robles Highlands, the highest AVA in Paso Robles, and is certified by both the SIP Sustainable Agriculture Act and the CCSW California Certified Sustainable Winery. It is also one of the largest organically certified vineyards in California, and is a very unique vineyard that grows 25 different grape varieties. The soil is alluvial, consisting of sandy loam. It was originally named "French Camp" because shepherds from the Basque region of France immigrated there and grazed their vines.
Clay Block
Brock, whose father was a vineyard manager in Northern California, was born into a life in wine. While attending Cal Poly San Luis Obispo, he fell in love with the Central Coast and gained experience at renowned wineries such as Byron, Edna Valley, Zacca Mesa, Wild Horse, and Estancia. In 2010, he was named Paso Robles Winemaker of the Year.
