This Chianti Classico Gran Selezione is born from aromatic grapes harvested in the Campolongo vineyards, which are spread across the historic terraces at 420 to 580 meters above sea level. The wine is made with the wisdom and experience of winemaking inherited by Ramole di Ramole. The Campolongo vineyards are one of Ramole di Ramole's best vineyards and the culmination of their passion. Intense, brilliant ruby ​​red color. The gorgeous aromas of violets, red and black berries coexist attractively with spicy, concentrated aromas. The mouthfeel is powerful, strong, dynamic and elegant. The tannins are dense, with fine acidity and juicy fruitiness, and the fruit, spice and herb flavors linger on the finish. The wine's concentrated and rich flavor makes it a perfect match for rich soups, pasta with game meat in sauce, slow-cooked meat dishes and dishes with spices and herbs. It goes well with aged cheeses. After strict selection, the grapes are harvested and destemmed. An optical sorter is used for selection. After pressing, the grapes are fermented in 50hl conical tanks and left to soak on the skins for about two weeks. They are then aged in medium-sized oak barrels for more than 30 months, and partly in barriques. They are then aged in bottles for more than nine months before being released to balance the complexity and structure of their aromas. This cantina is located on the hill of Ramole in the Greve in Chianti region. Ramole is the name of the land and the name of the Sangiovese genes discovered here. Ramole di Ramole is the name given to the original Sangiovese. It is said that the Sangiovese of Brunello di Montalcino originated from trees transplanted from Ramole. The vineyard owns 47 hectares at an altitude of 350 to 600 meters. This area is the highest in Chianti Classico. Currently, it is said that the Ramole area is a subzone of Chianti Classico, and there is a movement to separate it from Greve in Chianti and become "Ramore in Chianti". This shows that the unique terroir of Ramole gives Chianti Classico more individuality and diversity, and that it contains the qualities to produce great wine. The soil consists of three parcels, one Galestro soil and two soils composed of clay, sand and stone. The average age of the vines is about 20 years. However, some of the vines are over 70 years old. The area is characterized by moderate precipitation in spring and autumn, cold winters and warm summers. This area experiences extreme temperature differences due to the winds blowing in from the northern Apennines, which results in grapes that are rich in both sugar and polyphenols, and have a beautiful acidity and elegance. Enologo Andrea Daldin is a specialist who worked with his predecessor, H. Pariani, who has since retired, for about 20 years. He is from San Gimignano, and his father is a grape grower who makes Vernaccia. His five brothers are all still in the wine business, making this a true wine family. Having helped his father with his work since he was a child, wine work has become ingrained in him, and for him, this job is truly his calling.
