DINING
Pork stewed in tomatoes, sweet and sour pork with black vinegar, duck, wild boar, lamb roti, beef cheek stew, wagyu beef, beef fillet grille, and steak.
TASTING
The scent is reminiscent of fresh red fruits such as cassis, blackberry and raspberry, the spiciness of fine black pepper, fig confit and tanned skin, and a hint of herbs. "Napa Cabernet Sauvignon" has a wonderful balance of acidity, fruit, and tannins, and you can feel the compatibility between the variety and the terroir.
COMMENT
Windchaser is a family-owned urban winery founded in 2015 in the warehouse district of Berkeley, California. Grape sources are concentrated in El Dorado and Mendocino, California. The intervention of the maker is kept to a minimum, and natural yeasts are utilized, and small amounts are produced by selecting brewing methods that bring out the potential of each grape, such as barrel fermentation and whole bunch fermentation. The use of SO2 is also kept to a minimum. We are releasing a variety of wines, from classic and clean tastes to funcalicious (a coined word of Funky + Delicious).
The winery name "Wind Chaser" comes from the fact that Dave, a maker who loves surfing, has traveled around the world in pursuit of the wind for many years.
WINMAKING
First vintage. Rutherford Organic Certified York Vineyard Cabernet. Harvested by hand. Whole bunch fermentation with 100% natural yeast in open top fermentation barrels, punching down twice a day. Aged in new barrels and neutral French oak (30% new barrels). Finished without clarification or filtration.
