Aged for 19 months in French barrels (84% new barrels). Salus is made in the same way as the estates selected at the time of blending. It has a rich aroma reminiscent of plums and black olives, and the youthful tannins give it a firm impression. Used for candlelight receptions (08VTG)
Vintage Information
2018 was a more moderate vintage, the complete opposite of the extreme 2017.
Dry winters followed by ample and timely rains in early spring and ideal weather during flowering produce a good fruit set, with the number of fruit per bunch being the determining factor, rather than the number of bunches or the size of the fruit. I was able to confirm a lot of things.
The mild summer temperatures allowed for a long hang time, allowing the fruit to ripen well without becoming too sugary, and retaining a clean acidity.
Harvesting took place over a four week period starting on October 5th.
Tasting Comments
Aromas of raspberry liqueur, black fruits, spices and Rutherford dust.
The flavors of black currant and boysenberry are balanced down to the finest detail, creating a seamless smoothness and refined tannins that give the wine a textured appearance.
In short, a modern wine made using traditional methods.
It is delicious when freshly released, but shows great potential with bottle aging.
