Aged for about 8 months in French barrels that have been used for several years (no malolactic fermentation), bottled in early summer 2017, secondary fermented in the bottle, and aged in the bottle for 23 months with the lees. Disgorged in spring 2019, dosage is less than 1g/ml. Released in spring 2020 after one year of bottle aging. Brosseau Vineyard (Chalon AVA) is located on a steep slope at an altitude of 550m, with rocky limestone soil mixed with weathered granite, a rare field in California. The cool marine climate and the unique soil create a special personality that combines acidity, rocky nuances and Californian fruit.
Technical information
Winemaking: Gently pressed, fermented using only natural yeast, aged for approximately 8 months in multi-year old French barrels (no malolactic fermentation), bottled in early summer 2018, undergoes secondary fermentation in the bottle and is aged on the lees for approximately 24 months.
Disgorged in early summer 2020, dosage is less than 1g/liter, and the wine will be released in autumn 2021 after one year of bottle aging.
Tasting Comments
This sparkling wine has a minerality reminiscent of the hard stone of the limestone and mellow granite that are characteristic of this vineyard, excellent acidity, and a concentrated, thick mouthfeel that blends into delicate bubbles, allowing you to clearly recognize the terroir.
The wine's individual characteristics will stand out if you uncork it a few hours before drinking and then store it in the refrigerator uncorked.

Brosseau Vineyards (Sharon AVA)
Located on a steep slope at an altitude of 550m, the soil is rocky and rich in limestone, and is a rare vineyard in California, with weathered granite mixed in. It is located in the Gavilan Mountains across from the Santa Lucia Highlands AVA, which continues south of San Francisco and south of Monterey, and is close to Mount Harlan in Calera, which also has limestone soil. Chateau Chalon made the AVA Chalon famous when it came in third place at the 1976 Paris tasting, beating out fellow Burgundy wines such as Domaine Ramonet's Batard-Montrachet and Drouhin's Beaune Clos des Mouches. The cool marine climate and the unique soil create a special personality that combines acidity, rocky nuances and Californian fruit. Dry farmed, self-rooted.
