Grapes are selected from several vineyards in the area where cold fog flows in. 20) is from one vineyard on the Sonoma Coast. 21) is a blend of two vineyards. The soil is Gold Ridge (an old seabed sandy deposit soil that is very well drained and allows the grapes to grow deep roots). Fermented and aged in French barrels for 11 months/65% new barrels. The beautiful acidity and minerality reminiscent of stones caused by the soil come out vividly, with the aroma of white flowers and citrus nuances like lime peel bursting. The mouthfeel is mild and creamy, with a savory and salty taste.

What is Cuvee Number Five? Cuvee Number One is the third wine produced using Pinot Noir/Russian River Valley, which was originally produced as an appellation wine.It was named with the hope that it would shine like "Chanel No. 5."

The first release was 2017 VTG, and 2021 VTG will be the fifth year.

We grasp the characteristics of each vintage and select the plots to use.

Technical information

Clones: Clones 76, 95, 124 (all Old Wente Selection)

Winemaking: The grapes were harvested in small blocks on a night in early September. They were brought to the winery before dawn, hand-selected, and gently pressed in a Budler press (a small vertical press) while still cold. The grapes were then left to rest overnight in stainless steel tanks before undergoing alcoholic and MFL fermentation in French barrels, followed by 11 months of barrel aging (65% new barrels).

Tasting Comments

It has a clean acidity that is reminiscent of the cold ocean typical of the Sonoma Coast, and a vivid minerality reminiscent of stone from the soil.

The aroma features white peach, lime peel, lemon meringue and hard, minerally notes like crushed stone, while the taste has nuances of juicy Red Delicious apple and fresh nectarine.The excellent acidity runs through the core, and the mouthfeel is mild and creamy with a long, savory, salty finish.

Field Information

Among the 16 AVAs in the vast Sonoma region, the Sonoma Coast is one of the most distinctive regions. It has thick fog influenced by the cold sea, salty winds that give it an elegant finish with excellent acidity that does not fade, a firmness and minerality with a sense of tension that comes from the complex marine soil, and powerful fruit that has ripened fully from the strong daytime sun. We wanted to create a Chardonnay that captures the vibrant brilliance that is reminiscent of the beautiful scenery when the fog suddenly clears while driving along the winding roads of Sonoma Coast, so we selected grapes from fields in several distinctive areas where cold fog flows in.

The 2021 vintage comes from two vineyards on the Sonoma Coast (Sun Chase and Nightwing).
