In Europe, "Blanc de Noirs" is made from 100% black grapes, but 25% Chardonnay is added to maintain the delicacy of the flavor, resulting in a pale salmon pink that is almost white with excellent balance and fullness.

His son Laurent and daughter Nathalie moved to the area and began making wine using traditional Champagne methods.
