First release of sparkling wine from our own vineyard in Ripon, AVA River Junction (where two rivers meet and cool breezes blow in). Harvested in early August, the grapes are immediately brought to the adjacent winery for pressing, and the lively, clean juice is sent for fermentation. Fermented in stainless steel tanks. After tirage, the wine is bottle-aged for 16 months with the lees (Champagne method, where secondary fermentation takes place in the bottle). Dosage is 2.5g/l after moving the bottle in a gyropalette. The result is a lively, fresh sparkling wine.
