Fermented in stainless steel tanks and aged for about 6 months in French barrels (new + several years old). The flavors of fresh cherries, strawberries, and raspberries are prominent, and it goes down very smoothly. The nuances of vanilla from the barrel aging are vivid, and the taste is a mix of ripe berries that spread throughout your mouth. It goes well with smoked salmon, charcoal-grilled salmon, red meat (roast duck, roast beef) and sauces with a light acidity.

Cultivation and Winemaking: Ferment in stainless steel tanks for 6 to 9 days after harvest, then press and return to the tanks to complete fermentation.
It is then aged for approximately six months in tanks made from French barrels.
