Fermented and aged in French oak barrels (100% malolactic fermentation, 65% new oak), aged for 10 months on the lees, and released after 2 years of bottle aging. A luxurious blend of citrus, crushed stone, and smoke. It rises from the glass with a firm acidity and fruitiness, so it can withstand long-term aging.

Grape flowers are very weak and wind or rain during flowering can cause poor fruit set.
In 2019, spring rains dealt a major blow, reducing the yield by 60% compared to the average, but growth proceeded smoothly thereafter, and the natural drop in yield allowed the flavor of each grape to be concentrated. We began harvesting on September 2nd, six days later than the previous year, and were able to harvest high-quality fruit in just two days.

The grapes are harvested when they are slightly yellow-green to yellow in colour and are gently pressed without being crushed.
Fermentation and aging (10 months) in French barrels (65% new barrels), followed by complete malolactic fermentation.
No artificial clarification is done, but to give it clarity, the wine is lightly filtered before bottling.
The difference between Mount Eden Chardonnay and Chardonnay outside of Burgundy is its "long aging potential."
That's one of the things that makes this Chardonnay not just a good wine, but a great wine.
One of the factors is excellent acidity, as abundant acidity slows down the rate at which the wine ages.
For this reason, the Estate Chardonnay is aged in bottle for two years before being released.
Tasting Comments
Mount Eden Chardonnay is characterized by its floral aromas of honeysuckle and gardenia, citrus peel, and earthy minerals.
Made using traditional brewing methods, it has the usual firm acidity, and is well-balanced and delicate in flavour.
The mineral finish is long and delicate. The Estate Chardonnay is aged in bottle for two years before release, but is best enjoyed over the next seven to ten years.
