The vineyard is located in Mardeuil, Boursault. Dosage 6g/L, production volume 6,000 bottles. Joannes-Liotet is a long-established producer with a long history as an RM (récoltant-manipulant), having started bottling in 1929. The origins date back to Robert Liotet's grape growing in Boursault, in the Marne Valley, in the center of the Vallée de la Marne. Later, he began growing grapes in collaboration with Emile Joannes, who was also a grape grower in the neighborhood, and before long, the two families joined forces and started "Joannes-Liotet". Jérémie Joannes, the current cellar master, is the fourth generation winemaker. After earning a baccalaureate in oenology at a high school in Avize, he earned a BTS (higher technical degree) in oenology at a technical school in Bordeaux, and then further studied oenology at the University of Dijon. After training at prestigious wineries such as Chateau Margaux and Chateau Léoville Las Cases, he took over Joannes Liotté and continues to work there today. For brewing, only the cuvée is used, and each parcel is pressed and débourbage is performed for 24 hours, and the sediment is allowed to settle before the primary fermentation in stainless steel tanks. After malolactic fermentation, the wine is blended and then fermented in the bottle for 28 to 36 months. In addition, more than 40% of the vin de reserve is used per bottle to give the liquid fullness and finesse. The vin de reserve is aged and managed separately in stainless steel tanks and wooden barrels, giving the wine depth. The winery owns 9.4 hectares and is cultivated almost entirely using the lutte raisonnée method. As 90% is sold domestically, very little is exported.
