Cabernet Sauvignon 76%, Petite Sirah 9%, Petit Verdot 9%、Teroldego 6% ステンレス・タンク醗酵後、プレスしタンクに戻し醗酵を最後まで終わらせる（最後まで果皮と一緒にしない為穏やかな味わいとなる）。その後、仏産＋米産（新と数年使い）の樽材にて約4～6ヵ月熟成。ブラック・ベリーのアロマがあり、ブラック・チェリー、ブルーベリー、カシスの様な味わいが印象的。樽熟成によるほのかな香ばしさがあり、舌触りはまろやかで、クリーミー。渋みも穏やかで心地よい。肉料理全般、チーズ、トマト系の料理と良い相性。
Production Notes
The fruit for our 2020 Cabernet was harvested during the month of September, 2020 with an average Brix of 26.8. After 7-9 days of fermentation on the skins, the resulting wine was pressed and finished fermentation in Stainless Steel tanks. The wine was then aged on new and used French and American Oak for 4-6 months.

Winemaker Notes
Dark garnet in color with a bouquet that is full of dark berry fruit, such as Blueberry, Blackberry and Black Cherry. Oak aging has contributed just a hint of smoke to the nose. The round, creamy wine delivers an abundance of the fruit flavors promised by the olfactory. The fruit and oak are well integrated and the complexity of the wine plays on the tongue long after the wine has been ingested.
