若いうちは非常にタニックですが、数年寝かせることでタンニンは滑らかになり、アロマはより複雑になります。シルキーなタンニンで味わいは柔らかく開いており、プルーンのアロマが特徴的なクラシックなサン・ジョセフです。

醸造：開放式の大きな発酵槽を使用し、一部は除梗。発酵とマセラシオンの段階でルモンタージュとピジャージュを1日に2回、3週間行う。その後ワインを大樽に移し12〜14ヶ月熟成させ、ろ過をせず瓶詰め。
The Gonon brothers produce wines that are built for the cellar and 2005 is no exception. On the nose, a savory bouquet of game, red and black fruits, licorice, and an intense backbone of iron minerality which surely originates from the heavily granitic soils upon which the vines rest. Wonderful concentration of fruits, structure, and ripe tannin all together foretell a long storied life ahead. Exquisite!!
